Alcolase® enzyme products are used in the production of bioethanol for fuel and potable applications and used to improve yields of co-products derived from the process. The main enzymes are alpha amylase which breaks down large starch molecules for viscosity reduction and glucoamylase which converts these long chains starches into glucose which can be utilized by the yeast for conversion to ethanol.
